If you’re a vegetarian then this recipe is perfect for you!
Ingredients
- Courgettes
- Peppers
- Onions
- Panini
- ½ pack of unearthed feta cheese
Method
- Put courgettes, peppers and onions in a roasting dish and drizzle with oil, roast for approx 20 minutes
- Slice Panini in half
- Slice unearthed feta cheese into chunks and put into Panini
- Remove your roasted vegetables from the oven, and layer then on top of the feta.
- Close Panini and put into oven for a further 10minutes and then ready to serve!

Well not the big screen necessarily but you never know! We have recently filmed some super unearthed recipes with celebrity chef Silvena Rowe – some of you may know her from the BBC’s Saturday Kitchen. Silvena is originally from Bulgaria and has a vast knowledge of food acquired from all of her travels – so we couldn’t think of anybody better to get in and give us all an unearthed master class.
On location at a stunning house in Surrey, we filmed five smashing recipes put together by Silvena. Sometimes it is surprising, that when you have one great product you need little else to create a delicious meal. For example, we tasted a fabulous dish built around our unearthed feta, Silvena simply added tomatoes and the ingredients of a tangy marinade and voila – a divine feta starter. We will be adding all of the recipes and the filming of how to make them shortly – so watch this space!

unearthed Barrel Aged Feta is produced in Greece at the Roussas dairy. The cheese recently won a Gold Award at the World Cheese Awards. We always knew that the Feta we had discovered was one of the very best and now it is official!

So, what makes it so good? Well, it is hand cut into blocks (shaped like those Trivial Pursuit segments) and packed in to traditional Beech wood barrels where it matures for a minimum of 4 months. This gives it a slightly drier texture and more intense flavour than most feta.
Another reason why our feta is so tasty is that it is made with a blend of sheep and goat’s milk. This is one of the traditional varieties – some feta is made with just sheep’s milk – and we think that the combination makes for a more balanced cheese.
