Roasted stuffed tomatoes

Why not try these roasted stuffed tomatoes, perfect for a starter or as a quick snack! Could even try it with peppers, if you want it to be more of a main dish!

Ingredients

  • 3 tomatoes
  • ¼ of an unearthed feta
  • 3 slices of unearthed prosciutto crudo
  • ¼ red onion
  • Parsley
  • 1 tsp of pesto

Method

  • Slice the top of the tomato off, and scoop out the inside
  • Lay out one piece of prosciutto crudo, and spread a thin layer of pesto on it.
  • Cut up unearthed feta into chunks
  • Dice some onion
  • Wrap the onion, and feta in the prosciutto crudo then put into the tomato
  • Sprinkle with a bit of parsley then put into the oven for 15minutes until soft
  • Remove from the oven and ready to serve!!

Tomato, onion and prosciutto crunch

Ingredients

  • 1 French stick
  • Extra virgin olive oil
  • Salt and freshly ground pepper
  • 1 cup of parmesan
  • 1 red onion diced
  • Salt
  • Parsley
  • 4 large tomatoes
  • 1 pack of unearthed prosciutto crudo

Method

  • Cut French stick in half and then into small sections
  • Drizzle with olive oil, salt and pepper and then sprinkle with parmesan cheese and put in the oven for 10-12 minutes until golden.
  • Dice the onions and tomatoes and marinade the mixture with some balsamic vinegar, salt and pepper.
  • Add some parsley, finely chopped and then stir the mixture.
  • Wrap one slice of prosciutto crudo round each piece of bread and then spoon a tablespoon of salsa onto the top and serve to your guests!

Feta, onion and mash rolls

Ingredients

  • 1 pack of unearthed feta
  • 1  onion
  • 3 potatoes
  • Milk
  • Butter
  • Salt and pepper
  • 1 sheet of Filo pastry

Method

  • Fry onions in some oil so that they soften
  • Boil potatoes until they are soft, drain water, and add milk, butter and salt and pepper and then mash
  • Chop feta into chunks and then add the feta and onion to the mash.
  • Roll out the filo pastry and cut into small sections and put the mash into the parcel.
  • Glaze with milk then put into the oven for 20-25mins until they are browned.
  • Remove from the oven and then serve!!

Grilled vegetable and Feta Panini

If you’re a vegetarian then this recipe is perfect for you!

Ingredients

Method

  • Put courgettes, peppers and onions in a roasting dish and drizzle with oil, roast for approx 20 minutes
  • Slice Panini in half
  • Slice unearthed feta cheese into chunks and put into Panini
  • Remove your roasted vegetables from the oven, and layer then on top of the feta.
  • Close Panini and put into oven for a further 10minutes and then ready to serve!

Feta, Pesto and Prosciutto Crudo Panini

Why not try this hot tasty Panini for a light snack at lunch time, very filling and so delicious!

Method

  • Slice open the Panini
  • Spread an even amount of pesto on each side
  • Slice feta into small chunks and put into the panini
  • Layer the unearthed prosciutto on top, and then put both layers together
  • Grill for approx 10minutes and then ready to eat!
