Prosciutto Crudo eggy bread!!

Why not try this delicious twist on our traditional English eggy bread:

Ingredients

Method

  • Whisk egg and milk together
  • Season with salt and pepper
  • Dip bread into the mixture, until soaked thoroughly
  • Add unearthed prosciutto crudo to make a sandwich with both slices of bread
  • Put into a hot frying pan and fry until golden and toasted
  • Serve as it is, or with fried mushrooms for your tasty Italian breakfast!!

Catalan Cooking Sausages launch in Waitrose!

Catalan Cooking SausagesCatalonia, in the northeast of Spain, is a varied region, from the mountains of the Pyrenees to the sandy beaches of the Costa Brava and the art and bustle of Barcelona. It also has a varied cuisine, with French, Greek and Italian influences mingling with those of the rest of Spain. Amongst the most famous culinary traditions of Catalonia are their sausages and they feature in a number of the region’s most popular recipes.

At unearthed, we love the continental technique of gently drying sausages to produce a semi-cured product. The flavour concentrates as they are cured and they are perfect for cooking, remaining much softer than a ready-to-eat chorizo for example. The latest sausage we have found is this Catalan Cooking Sausage, naturally flavoured with fennel and black pepper.

Bangers and Mash Spanish StyleYou can really use them anywhere you would use a regular sausage, but they are great for hot tapas or in Mediterranean recipes. In the office we served the very first batch with quirky paprika mash – bangers and mash Spanish style!

Catalan cooking sausages and Paprika Mash

Instead of the english traditonal sausage and mash, try these new Catalan cooking sausages, the newest addition to the unearthed range, delicious with paprika mash and some steamed vegetables!!

Ingredients

Method

  • Boil potatoes until soft, drain and then mash
  • Add milk, butter and a pinch of paprika, mash until soft
  • Add oil to a pan and add the Catalan cooking sausages and fry for 15minutes.
  • Remove from the pan and serve with the paprika mash

Serve with vegetables, very quick and easy and a way to bring the mediterranean straight to your dinner table!

Olive, Feta and Pesto Tart

If you are vegetarian this is perfect, and so delicious for an evening meal

Ingredients

Method

  • Fold out your short crust pastry and put into a tin, layer with silver foil and put baking beans in the tin and cook for 15mins
  • Remove from the oven, taking the baking beans and silver foil out.
  • Line the bottom of the pastry with pesto
  • Add 6 eggs, milk, salt and pepper to a bowl and whisk up
  • Add the chunks of feta, and olives to the egg mixture and pour into the pastry case.
  • Cook in the oven on a medium temperature for 25minutes
  • Remove from the oven and serve with a mixed salad perfect for an evening meal!

Chocolate Panettone Bread and Butter Pudding

Why not give this delicious pudding a go? Bananas, chocolate and panettone what else could you want!

Ingredients

Method

  • Slice the panettone into 5 slices and layer in a dish in two rows
  • Slice 3 bananas up, and place in between each slice of panettone
  • Pour one pot of fresh custard into a jug with half a pint of milk and pour into the dish making sure that all of the panettone is drenched in the custard
  • Chop up one large bar of milk chocolate into small pieces and scatter through the dish
  • Put in the oven for 30minutes on a medium heat
  • Remove from the oven when crispy and serve!!
